Feta + olives + artichoke hearts is one of my favorite combinations. Thankfully, those three ingredients can be combined with almost any other to make a delicious side dish or main course. My favorite dish that include those three ingredients is Mediterranean pasta salad.
Pasta of choice
Olives (your favorite variety or a combination thereof), sliced
Artichoke hearts, drained and chopped
Tomatoes are optional (canned is fine, though halved cherry tomatoes are the best)
Any other veggies of choice, diced (if you have squash or zucchini lying around, add those!)
Balsamic or red wine vinegar
- Prepare the pasta according to the package directions, drain, and rinse with cold water (to stop the cooking process). The pasta is best when left a bit al dente, since no one likes soggy pasta salad.
- Toss the pasta lightly in olive oil and place in the fridge to chill.
- When the pasta is chilled, add the remaining ingredients, waiting until last to toss the entire mixture in the vinegar of your choice. Make sure to not add salt to the dish, because the feta will add plenty of salt to the salad.
- Return the salad to the fridge to chill and allow the flavors to combine.
This dish is wonderful served alongside grilled chicken, shrimp, fish, or steak, for lunch or dinner, or at a cookout.
