One of the easiest appetizers I have found to bring to parties or get-togethers is crockpot spinach & artichoke dip. Now, you obviously don’t need to use your large crockpot for this – a small one will do perfectly. This dip can be served with tortilla chips, crudités, or crostini.
A package of frozen spinach, thawed & drained
A package of cream cheese
A can of artichoke hearts, drained & cut into pieces
A bag of shredded parmesan cheese
Put the spinach, cream cheese, and artichoke hearts in the crockpot and heat until the cream cheese starts melting (this should be done over low heat, if you have the time, though, if needed, you can use high heat for a speedier preparation). Once the cream cheese has melted and you are able to stir together the spinach, cheese, and artichokes, make sure the mixture is heated through, then added the shredded parmesan. Season with salt and pepper.
Stir to combine and serve warm. (Eating straight out of the crockpot is completely acceptable!)
